Vegan Rainbow Sandwiches

  1. Prepare your sandwich fillings before removing the bread slices. This will help keep your sandwiches soft and fresh. Wash the lettuce, slice the tomato, and grate the carrot.
  2. Chop the smoked tofu into small cubes and then crush into a bowl with your fingers. Add the black pepper, turmeric, cress and roughly 4 tbs of mayonnaise, depending on your preference for dry or moist sandwich fillings. Combine well.
  3. Butter the slices of bread. Then, create three separate sandwiches. In the first, add the tofu ‘egg’ mayo. In the second, add beetroot hummus and the grated carrot. In the third, add sliced tomato, lettuce and mayo. Once you are happy with your sandwich fillings, slice as per your preference; we love triangles.
  4. Serve and enjoy!
